Устанавливаем ViaVersion на прокси и все backend-сервера. На прокси ограничиваем вход с версий меньше минимальной на серверах сети. Для backend-серверов мнимальную версию устанавливаем по мере изменения версий игры отдельных серверов (лобби долгое время может оставаться на версии 1.21, если нам не нужны новые блоки, но на выживание мин. версия будет увеличиватся после обновления).
